Gluten-Free Cookies!
If you, like me, were salavating at the pear and ginger cookie recipe I posted last week, but are gluten-intolerant, please send Anna all your thank-yous because she sent me this. Enjoy.
ZOMG I cured cancer cookies*
1 c Grated Pear (2-3 pears of your choice)
1 c Sugar
1/2 c Butter
1 Egg
3/4 c Sweet Sorghum Flour
1 1/4 c White Rice Flour
1/2 t Salt
1/4 t Nutmeg
1/2 t Cinnamon
1/2 t Cloves
1 t Baking Soda
1 t Xanthan Gum
1 c Golden Raisins
1/2 c Crystallized Ginger
1/2 c Chopped Walnuts (optional)
Grate pears and add baking soda, set aside. Cream together sugar, butter, and egg until fluffy. Add pears and sift in flours, spices, and xanthan gum. Incorporate raisins, ginger, and nuts.
Use a tablespoon sized scoop to place dough on a lined or greased baking sheet. These do not spread like cookies baked with ordinary flour, so the size of scoop you use will be the size of cookie you get. Bake for approximately 18 minutes at 350 degrees.
Yields roughly two dozen amazing cookies.
